Jamaican Jerk Chicken Tacos with Mango Salsa: A Flavor Explosion

Jamaican jerk seasoning is hands-down one of my favorite flavor profiles in the world. It’s earthy, spicy, and fragrant with a richness that’s utterly distinct. Today, we’re taking that signature jerk essence and combining it with tender chicken and a pop of fresh mango salsa for tacos that are downright dreamy.
This slow-cooked jerk chicken marinates in a deeply flavorful blend until it’s melt-in-your-mouth tender and juicy. After shredding the chicken, the sweet and tangy mango salsa provides the perfect contrast, making each taco bite unforgettable. This recipe is a low-effort, high-reward masterpiece—so simple, I like to call it “stupid-easy.” Trust me, you’ll be making these on repeat!

Ingredients
  

  • 4 boneless/skinless chicken breasts about 2 lbs
  • ½ medium yellow onion chopped
  • 6 sprigs fresh thyme destemmed
  • 1 teaspoon garlic powder
  • 1 teaspoon ground allspice preferably Jamaican-style
  • ½ teaspoon smoked paprika
  • Kosher salt & freshly ground black pepper to taste
  • cup Walkerswood Jamaican Jerk Seasoning paste, I use spicy
  • ¼ cup chicken broth
  • 1 teaspoon browning sauce I use Grace browning
  • 1 small lime zested & juiced
  • For serving: flour or corn tortillas chopped cilantro, & lime wedges for squeezing- as desired
  • For the fresh mango salsa:
  • 2 cups fresh diced mango
  • 1 medium red bell pepper chopped
  • ½ cup diced red onion
  • ¼ cup fresh chopped cilantro
  • 1 small lime zested & juiced
  • Kosher salt- to taste

  • Slow cooker Instant Pot

Method
 

  1. Place chicken breasts in a slow cooker. Add the onion, thyme leaves, garlic powder, allspice, smoked paprika, salt, pepper, jerk seasoning paste, chicken broth, browning sauce, and lime zest + juice.
  2. Massage the ingredients into the chicken (wear gloves if preferred) until everything is evenly coated.
  3. Cover and cook on low for 6 hours or high for 4 hours, until the chicken is cooked through and fall-apart tender.
  4. While the chicken cooks, prepare the mango salsa. In a medium bowl, combine diced mango, bell pepper, red onion, cilantro, lime zest + juice, and a pinch of salt.
  5. Toss well and refrigerate, covered, to let the flavors meld together.
  6. Once the chicken is done, shred it directly in the slow cooker using two forks. Stir the shredded chicken into the cooking juices for extra flavor.
  7. Serve the shredded jerk chicken in warm tortillas. Top with fresh mango salsa, chopped cilantro, and a squeeze of lime juice.
